HARVESTING AND VINEYARDS

   The "Cuvée Vendanges d'Automne" was vinified for the first
time in 1995, by the selection of a vineyard plot in a perfect state
of health which we have harvested at the late of october, when the
grape are at 23°.

  VINIFICATION
 
   By contrast with the Frontignan Muscat, fermentation is not
stopped during vinification however, and almost all the sugar is
transformed into alcohol.

   To ensure an optimum extraction of flavour and bouquet,
we leaved the fermentation stop by himself when the wine have
83 gr/l in residual sugar and an alcohol content of 14°5.

   This wine is vinified in new barrels and in barrels aged of 3 years.



 
 
  YIELDS

   For the "Cuvée Vendanges d'Automne", yields is about 5/6 hectoliters per hectare.
 
 ORGANOLEPTIC QUALITIES and SERVING SUGGESTIONS

   From the first whiff of the bouquet one is deep in the world of the "Cuvée Vendanges d'Automne"
and surrounded by an dry flowery fragrance with candied ginger and mixing tobacco, spice and fruit.
   It finish very condensed and fresh both.

  Serve at 9° to 10°C. Excellent with foie gras, it goes perfectly with aperitif or desserts.
