HARVESTING

   The Dry Muscat - Vin de Pays d'Oc is produced from the
same grape variety as the Muscat de Forntignan : a Small
White Muscat Grape variety.


   The grapes are harvested when they reach an alcohol content of 13°.

  VINIFICATION
 
   Depending on the quality of the harvest, the grapes are macerated
before pressing, grapes and must are left in the press for a few hours
to ensure an optimum extraction of flavour and bouquet.

 
Dry Muscat "Cuvée des Lilas"
 
   After a very slow pneumatic pressing, the must from the press is immediately cooled to 6°C and allowed to
rest for 48 hours.The clear wine is then racked and fermentation started using selected yeasts.
 
  VINEYARDS and YIELDS

   At the foot of the Gardiole hills dominating Frontignan, in all-pervasive argillaceous limestone south facing.
   Yields of 1.300 bottles per hectare.
 
 ORGANOLEPTIC QUALITIES and SERVING SUGGESTIONS

   A delightful pale, intense gold colour, with a complex and powerful yet flavoursome bouquet. Clean and
lively on the palate, with a long, full flavoured finish.

   Serve at 9°/10°C. Delicious with foie gras, asparagus, smoked fish, pies and tarts, refreshing as apéritif.
